For thousands of years Amaranth was a diet staple  for villages across Africa and Latin America. Still  widely eaten today, Amaranth is high in  protein and healthy starches. In recent years, varieties such as the Red Cathedral have gained fame for their blood red flowering and attractive form.

Other than Red Cathedral, this species is also known as the Blood Amaranth, Prince’s Feather and Mexican Grain Amaranth.
This particular species of Amaranthus was used as a food source in Central America as early as 4000 BC. It is now seen as a beautiful ornamental rather than a food source.
Though it is no longer seen as a staple food, it is found in health shops and supermarkets across Latin America and Africa.
